Catalyst is our flagship mineral profile, meticulously crafted to amplify the flavor spectrum of coffee. Designed to highlight complex fruit notes, vibrancy, sweetness, body, and finish, Catalyst is a versatile profile that excels with naturally processed, anaerobic, and other heavier processed coffees. It is also an excellent companion for competition lots, ensuring that every sip is rich and expressive.
Catalyst is also designed for convenience, on-demand for any situation. Our squeeze bottle with precision dropper tip offers dosing in controlled droplets to squeezing out larger doses seamlessly. No more dosing with a dropper. No more brain work on mixing different minerals for brewing in the morning, or mixing sachets with large amounts of water.
When To Use Catalyst?
As Pre-brew Base
→ By Processes: Dry, Natural, Anaerobic Natural, Carbonic Maceration, Red/Black Honey
→ By Flavour Notes: Sweet, Fruit-forward, Berries, Tropical Fruits, Dried or Cooked Fruits, Winey, Brown Sugar/Honey, Sweeter Florals like Rose or Hibiscus
As Post-brew Drops
→ When the coffee needs a touch of sweetness or body.
→ When the coffee is too bright/acidic or bitter.
How To Use Catalyst?
As Pre-brew Base
Start with 5g of Catalyst concentrate per litre of distilled or deionised water ( or 1:200 ratio ).
Simply unscrew the tip cover, place your vessel on a 0.1g scale, squeeze your desired amount, and add water!
As Post-brew Drops
Per drop of Catalyst weighs around 0.04g, adding 5ppm of minerals to 200ml of beverage.
Just 1 to 2 drops will make a noticeable difference
Adjusting Catalyst
Higher Dose:
→ Flavour Intensity, Sweetness, Body ↑
→ Aroma Intensity, Acidity/Sourness/Brightness ↓
→ (Opposite is true for a Lower Dose)
Adjust higher when coffee lacks sweetness and body, is too bright, or can be more fruit-forward & expressive.
Adjust lower when coffee is too dark, heavy, flat or salty, and can be lighter or more aromatic.
Catalyst can also be blended with Affinity, in varying ratios to achieve a customized balance, bringing added sweetness and body when needed.
Catalyst Beyond Coffee
Catalyst enhances the depth and sweetness of fruit juices like grape, berries, tropical fruits, and juice blends, making them sweeter, fuller and more indulgent.
In Matcha and Tea, it can highlight umami and sweetness, with a rich and lingering mouthfeel, while reducing bitterness.
When added to lighter wines such as Pinot Noir, it rounds out flavors, softens edges, and enhances body and sweetness for a more balanced and pleasurable drinking experience.
